Chicago's vegan scene, from omegacado to umeboshi ? The ...

We?ve all heard the hubbub over Chicago-style hot dogs, deep-dish pizza, and Italian beef sandwiches. But to those of us who prefer food sans animal products, Chicago may at first appear to be lacking. However, I have discovered that Chicago boasts some outstanding vegan chefs. Here is a sampling of the most memorable vegan dishes the city has to offer.

Vegans, experiment with this roll and venture beyond cucumber and avocado (non-vegans, skip the California roll).According to Eden Organic Foods, a company that sells a brand of umeboshi plums at Whole Foods, umeboshi is an alkalizer, digestive aid, and appetite stimulant.

Liz Taylor tops list of highest earning dead celebrities

NEW YORK (Reuters) - Elizabeth Taylor surpassed Michael Jackson as the highest-earning dead celebrity in the past year, with her estate pulling in $210 million, much of it from the auction of her jewels, costumes and artwork, Forbes said on Wednesday.

Jackson, who died in 2009, dropped into second place with earnings of $145 million, followed by Elvis Presley with $55 million.

In addition to the Taylor auction, which totaled $184 million, the actress, who passed away in 2011 at the age of 79, also earned $75 million from sales of her top selling perfume White Diamonds.

"The rest of the money came from property sales and residuals from Taylor's movies," according to Forbes. "After 'Cleopatra,' the star smartly negotiated a 10 percent ownership in each of her films."

Although Taylor bumped Jackson from the top spot, Forbes said the pop star is likely to regain it next year due to steady revenues from music sales and other ventures.

Cartoonist Charles Schulz, who created the Peanuts comic strip, came in at No. 4 with earnings of $37 million, followed by reggae star Bob Marley with $17 million.

Forbes compiled the ranking by analyzing the dead celebrities' earnings between October 2011-2012.

"We count money coming into the estate and we don't deduct for how the estate handles it," Forbes said.

Films stars and musicians dominated the list but Nobel-prize winning physicist Albert Einstein tied with Marilyn Monroe for seventh place, with each earning $10 million.

The 13 dead celebrities on the list earned a total of $532.5 million.

Ed Slott

Ed Slott is one of the nation?s top experts on IRAs and retirement saving. An author, public speaker and CPA, he emphasizes the importance of strategies for minimizing the tax burden on retirement saving.

Ed recently published a brief book laying out fundamental principals for young retirement savers, called Fund Your Future: A Tax-Smart Savings Plan in Your 20s and 30s. I posed five questions to him about the challenges facing young retirement savers; while I don?t agree with his pessimistic view of Social Security?s future, read on for his valuable advice on managing the saving process, developing a ?blueprint,? Roth IRAs and more.

Q: How has the challenge of saving for retirement changed for today?s young people, compared with the challenges their parents faced?

A. It is more challenging. Their parents and grandparents had more of the saving, investing and retirement functions taken care of for them through their job and Social Security.

Today?s young people need to be more involved in the process than their parents were. They have to start saving earlier and save more for two main reasons: They will live longer and they may not be able to rely on Social Security. Young people need to plan to fend for themselves. They should only consider Social Security as gravy ? an extra they did not count on.

They generally cannot count on their employers either. Many companies have moved from pension plans (where companies put money away and guaranteed you a retirement income) to 401(k) type models where employees contribute the lion?s share of the money to their company retirement plans. They also take on the risk and management of those funds, so they must be more diligent and involved in planning for their retirement than their parents and grandparents had to be.

Q: You talk in your book about developing a ?savings blueprint.? What is that?

A. A blueprint is a plan, just like when you build a home, but instead, this blueprint is for building your retirement savings so like that home, it will last as long as you do?and beyond.

Like a home blueprint, savings blueprints will help you build a solid foundation and keep you on track to build a healthy retirement account. It means sticking with that plan. The three key components of that plan are to contribute, convert and collect. Your goal should be to keep the tax man away so you can keep more of your savings.

Q: A big theme in all your work is the impact of taxes on retirement saving. What do you tell young people just starting out about how to be smart about taxes?

A. Tax Free. Tax Free. Tax Free. Tax Free is better.

When saving for retirement, it is essential that young people take advantage of their most powerful planning tool: time. They should consider the long-term tax impact on their retirement savings from the first day they put their first dime into a retirement account.

Taxes will be the single biggest factor that will separate people from their retirement dreams. Young people need to focus on building tax-free retirement money, so that taxes will be minimal or even eliminated when they come to collect in retirement. Young savers can accumulate amazingly large retirement savings when those savings don?t have to be shared with the government.

Saving tax free also means that you don?t have to worry about future high tax rates consuming your life savings. Saving tax free removes the uncertainty of what future higher tax rates could do to your retirement plans.

Q: With regard to Roths, are young people best advised to use a Roth IRA, or a workplace Roth if that?s available?

A. Both!

Most workers are eligible for both. Do as much Roth as you can afford. This is all building tax free, and that is powerful wealth building. It will never be eroded by future taxes. There are income limits for contributing to a Roth IRA (but they are very high so most young people will qualify). There are no income limits for contributing to a Roth 401(k) and you can contribute much more to a Roth 401(k) than you can to a Roth IRA.

In 2013 for example, the most you can contribute to a Roth IRA is $5,500 but you can contribute up to $17,500 to a Roth 401(k). Of course your company must have a Roth 401(k) option on their 401(k) plan in order for you to contribute.

For a Roth IRA, anyone with earned income (under those high income limits) qualifies to contribute, even if you do not have a Roth 401(k) at work. If you can afford to do both, first max out your Roth 401(k) at work and take advantage of any company matching ? but that matching amount cannot go into the Roth 401(k). It must go into your 401(k) part of the plan. But that?s still your money and it?s free money so you never want to walk away from that. Then if you can afford to, start filling up your Roth IRA (up to the $5,500 maximum for 2013).

Q: Many young people worry that Social Security won?t be there for them when their retirement rolls around. What do you tell young people about the future of Social Security, and it?s value as part of a retirement plan?

A. As I said in answer number one, and as we say in New York . . ?Social Security for young people . . . Fugetaboutit!

Young people have to face reality and math. You?ll have to build your retirement savings on your own. Anything that might come from Social Security will be an extra surprise. That?s why you need to take charge now, start early and create your own plan to build tax-free retirement savings.

While you might not get Social Security like today?s retirees received (even if you are paying for it out of your paycheck ? I know that sounds unfair) you have a bigger advantage than people collecting Social Security now. Young people have time and time is the greatest money making asset anyone can posses.

You have it and you need to capitalize on it immediately. Every lost day could means thousands less at retirement. Compounding over time is the eighth wonder of the world and the amount you can amass will amaze you! Then imagine all of that tax free! Not too shabby.

Pussy Riot got what they deserved: Putin

NOVO OGARYOVO, Russia (Reuters) - President Vladimir Putin flatly rejected on Thursday Western criticism of the imprisonment of the Pussy Riot punk protest band, saying its three female members deserved their fate because they threatened the moral foundations of Russia.

During a two-hour dinner conversation with a group of foreign Russia experts, Putin spent most of his time carefully explaining how his country was trying to improve the business climate and diversify the economy away from its heavy dependence on oil and gas by promoting high-tech industries.

The Kremlin chief said he had "mixed feelings" about a $55 billion state-sponsored takeover of the country's number three private oil producer TNK-BP last week because it increased state-controlled Rosneft's domination of the energy sector.

But Putin said he acted to help BP and put an end to "fistfights" between the British oil major and its four Soviet-born oligarch partners. "We tried not to get involved, but when BP managers came to me and the government and said we want to cooperate with Rosneft, we could not say no," said Putin. Rosneft is run by a longtime close Putin ally, Igor Sechin, and the deal will give BP a stake of nearly 20 percent.

Putin said he was implementing new laws and reforming the courts to reach a target of moving Russia up from its 112th place in the annual World Bank rankings for ease of doing business - below Pakistan - to a top 20 place by 2018.

PUSSY RIOT

But the president, now in his 13th year running Russia, became animated only when asked about Pussy Riot during the seven-course meal with the Valdai Club of foreign journalists and academics at his Stalin-era residence in a wooded compound outside Moscow.

The Valdai members were kept waiting in a separate room for an hour and a half for the meeting, while Putin met a group of factory workers and teachers from the Volga region to discuss religious cults.

Two young women from Pussy Riot received two-year prison sentences for "hooliganism motivated by religious hatred" after performing a crude anti-Putin protest song in Moscow's main cathedral. A third band member was released on a suspended sentence.

At Thursday's dinner Putin raised his voice, looked straight at the questioner and asked why Westerners who criticized Russia for sending two of the young women to labor camps far from Moscow had not come out in support of a jailed American who made an anti-Muslim hate film.

"Do you want to support people with such views? If you do, then why do you not support the guy who is sitting in prison for the film about the Muslims?" the president shot back.

This was an apparent reference to "The Innocence of Muslims", a crude hate video that triggered violent protests across the Islamic world when it was aired on the Internet.

An actress in the film has identified an Egyptian-born Californian, Mark Basseley Youssef, as its author. Youssef is currently detained on suspicion of violating his probation terms for a bank fraud conviction.

"We have red lines beyond which starts the destruction of the moral foundations of our society," Putin went on. "If people cross this line they should be made responsible in line with the law." He described Pussy Riot's protest as "an act of group sex aimed at hurting religious feelings".

CLAMPDOWN ON DISSENT

Putin's comments came amid a wider clampdown on dissent in Russia, which has included arrests of opposition leaders on criminal charges and tighter controls on media.

This has led to fears that the political system, which is highly centralized under the Kremlin, is becoming increasingly ossified and intolerant.

Putin deflected a question about the possible stagnation of the system by saying Russia was re-introducing direct elections for state governors, making it easier for political parties to register and allowing citizens to petition the state Duma (parliament) directly with proposals.

Many of the same faces who worked with Putin when he was deputy mayor of St Petersburg in the early 1990s are still in senior positions in Moscow in the government and in state companies.

But Putin said around two-thirds of the members of the government had been changed when he returned to the Kremlin earlier this year, swapping places with his prot?g? Dmitry Medvedev, who is now prime minister.

"I prefer to choose qualified, experienced people who have proved they can do well," the president explained. He rejected suggestions that there were any disputes inside the government in the wake of the departure just over a year ago of long-time Finance Minister Alexei Kudrin.

TRADE GOALS

Putin insisted that Russia would continue to give a high priority to growing its trade with its top business partner China, aiming to boost bilateral business to $100 billion a year from current levels of $83.5 billion.

Beijing and Moscow were also keen to do as much trade as possible in their national currencies, he said, noting that the rouble was fully convertible and that it was a "matter of time" until the yuan was, too.

By contrast, he berated the European Union for its "ridiculous" slowness in agreeing a visa-free regime for Russia and attacked Brussels for not taking him up on an offer of cooperation on a new satellite navigation system between the European Galileo system and Russia's GLONASS project.

"The EU has a visa-free regime with certain Latin American countries, and I don't think their crime levels are any less than ours," he said. "I don't understand this approach."

Putin also had a ready answer for a questioner who enquired how he would stop an exodus of talented, qualified young people to the West. It was entirely normal, he said, for young people to study and work in other countries where there was more money or a good education on offer.

And what would the president want historians to highlight as the greatest achievement of his third term in the Kremlin?

"You know, I am never guided by a possible assessment of my work," Putin said, before highlighting how the economy had doubled in size under his stewardship, average incomes had soared, gold reserves were the world's fourth biggest, the birth rate had increased - all what he termed "modest, positive changes ... but not enough".

"We need to create a democratic, effective system of governance so that people feel they are participating," he said. "We need to create an effective economy which is looking forward and to guarantee the country's security. I am sure we are capable of solving all these problems."

I've written about DDS Rescue before. ?This is a?flat out amazing device and is highly recommended.? The DDS Rescue device is a computer (pictured above) that plugs into your network. ?A small program is installed on your server that allows the DDS Rescue device to find the server and connect to it. ?The device then begins to backup your server onto its hard drive, creating bootable "images" that can literally give you access to your data even if the server is turned off or destroyed.

The device also takes this same info and sends it to The Cloud. ?There it is stored on encrypted servers in a data storage facility that is secure and designed to be safe both from data theft as well as natural disaster. ?If your server or, heaven forbid, your office is ever destroyed or taken offline you have access to your data whether it is from the device in office or from the data storage in The Cloud.

Remember back in August when Acers JT Wang suggested that if Microsoft priced the Surface with Windows RT at $199 that it would negatively impact its partners and vendors? So now that the Apple event is over and we heard Apple announce the iPad Mini at $329, heres where the Microsoft Surface with Windows RT stands in terms of price:

Since its the more expensive option at this point, doesnt include the full type cover as initially thought (without additional charges), and only includes Office 2013 Home and Student Edition, does the Surface still stand a chance in the marketplace? Im curious to know how others feel about this.

Despite everything, Im still interested in the Microsoft Surface and Windows 8 application developer. For enterprise users, Windows 8 seems to be the best of both worlds, something that arguably Apple still cant capture. During Apples press conference today, they mentioned that they have 125 million documents in the cloud. They also announced that theyve sold over 100 million iPads. This means that theres just over 1 document in the cloud per person. Thats not too impressive. The other thing they mentioned is that developers made over $6.5 billion (with a b) on applications in the App Store. However, they failed to mention that this also translates to $2.79 billion that Apple themselves have pocketed for developers hard earned dollars. Microsoft is changing the game, slightly, for developers by offering an 80/20 split after the application has made $25,000 in the Microsoft Store.

Immune Cell Research Fuels Undergrad's Passion for Career, University

Newswise ? Three years ago, Kate Kondratuk didn?t want anything to do with South Dakota State University.

Like many of her classmates, the 2011 Brookings High School graduate thought her best bet for an education was at a private college or large university outside the state. Kondratuk admits she chose SDSU because she didn?t want to take out a loan to pay for her education and State offered her a good scholarship.

?What I?ve realized is that you?re as close or as far away from home as you want to be,? Kondratuk said. Today she?d like to get on the loudspeaker at Brookings High School and tell her peers, ?Hey, you guys need to look at this school.?

Her enthusiasm comes from the opportunity she?s had to do undergraduate research in microbiology and the lessons she?s learned from this work.

A sophomore, Kondratuk is already known for the work she?s doing with bovine viral diarrhea virus and the immune cells called neutrophils that rush through the blood stream to destroy any bacteria that enters the cow?s body.

Began with Microbiology Research Fellowship

Kondratuk was awarded a 2012 American Society of Microbiology Undergraduate Research Fellowship to study how these immune cells defend the cow?s body and how the virus neutralizes them. Her fellowship provided a $4,000 stipend for her research work, a two-year student membership and a trip to the society?s presentation institute and general meeting in Denver in May 2013.

Although she will finish the fellowship in December, she estimated that what she wants to accomplish on the neutrophil project will take the rest of her undergraduate career. She will continue her research through the university?s honors college as an independent study project.

Her adviser, professor Chris Chase of the veterinary and biomedical sciences department, agreed. ?This is not a trivial project,? he said. Very little research has been done on these immune cells since 1970 simply because it is so difficult to work with them. ?They die just like that,? Kondratuk said as she snapped her fingers.

Chase explained that the virus?s name is a misnomer because diarrhea is the final symptom. ?It is an immune-suppressive disease,? he said. ?White blood cell count goes down, and the animal becomes susceptible to other infections.? Pneumonia and respiratory diseases are the most common outcomes.

When an infection invades the cow?s body, neutrophils are released into the blood stream and rush to the site of the infection to eliminate it quickly, Chase explained. Once they spring into action, these immune cells live for only six hours.

Immune cells difficult to culture

Before Kondratuk can figure out how viral diarrhea neutralizes these first responders, she said, ?I have to work through a lot of kinks.? Once the blood is drawn from the cow, she has had to learn how to isolate and culture these tricky little critters.

?On a given day, it can be a good day or a really bad day when the neutrophils become active in the centrifuge, clump and die,? she said.

On the bad days, Kondratuk heads to the library to dig through the literature to find out what could have gone wrong, how to do it better next time and how to fill in the blanks for future experiments.

Kondratuk has figured out that if the cow has been running or stressed before the blood is drawn, the cells are more likely to clump. ?They are very delicate,? she said. She also puts the tubes of blood on ice as soon as they are drawn and centrifuges them at 4 degrees Celsius.

?Cold is the key to keep them from getting activated,? she said. Once activated, they die quickly, and she must wait until more blood can be collected.

Despite the challenges of working with these cells, Kondratuk said, ?I think they are cool. The neutrophils eat the bacteria and spit out extracellular traps that catch and kill foreign bodies.?

Undergrad become an expert

?She?s become the expert,? Chase said. She has developed her own support network, meeting the leading authority on neutrophils at the U.S. Department of Agriculture Agricultural Research Service National Animal Disease Center at Ames, Iowa and collaborating with a group of experts at the University of Wisconsin.

Next Kondratuk wants to see what the virus does to the neutrophils to prevent them from leaving the bloodstream as they normally would. She will begin by comparing healthy immune cells with those exposed to the virus.

?People don?t know about these cells,? Kondratuk said, ?and I want to find out everything I can.?

Kondratuk is considering a career in biomedical research and plans on getting her doctorate in immunology and infection diseases first and then a medical degree.

?I love the immune system, particularly the complex interactions of pathogens and immune systems,? Kondratuk said. ?I feel like I?ve had an amazing opportunity to start my career already through undergraduate research.?

I remember being about eight when we were once driving home from church, my mother seething. This happened pretty often, and we three children sat silently, wondering which of us had misbehaved so badly during the service that she felt she had to drag us out of church. She took a deep breath and began to talk to us about what women do.

Her voice shook as she explained exactly why she worked. She told us how she was not happy staying home; she elaborated on how difficult it had been when my brother and I, only one year apart, were babies and my father spent so much time working. She mentioned other families in the church in which the mothers did stay home, and how for some of them, it worked well, and for others, the women simply suffered and looked gray. She talked all the way home, trying to make us understand how no one answer works for every woman, and how women need each other. She wanted us to understand that the women who stayed home were not the enemies of the women who worked, but they were all the same people trying to find the best solutions for their families.

I also remember my mother often saying how she would crawl into a warm bath with a razor blade if she ever found out she was pregnant again- not a coat hanger mind you, but a razor blade.

There's a Breeders song that goes, "Saw it on a wall, motherhood means mental freeze. Freezeheads!", and I wonder about the neighbor ladies I knew as I got older.? Her best friend was a mess and not our neighbor, but she was like my mother. They could talk for hours about entertainment esoterica or the Hapsburgs or czarist Russia. My mother only saw her a couple of times a year, but she's the only woman, besides my aunt, I remember my mother spending quality time with. Those neighbor ladies watched soap operas and and seemed rundown by their lives. Maybe my mother was fleeing that as much as her three demanding children.

I remember sitting beside my mother in the car one morning when she had taken a day off from work; she was a little sick, but really, she had planned a day just puttering around the house. Between her commute and her handicap, she was too tired at the end of most days to tackle housework, and weekends were not long enough for any real project. Mostly, our house was pretty filthy, but occasionally, she would take a day and deal with some area or another. This particular day, I turned up sick as well. We had just dropped my siblings off at school, and she was headed back home. She said, "I know you're not all that sick, but I figured you needed the day with me."

And there it is; I just needed my mother.

I stay at home because I wanted her so badly. Staying at home has increased my questioning of what I was taught about feminism. I think my mother's speech in the car that morning defines what I believe. I like to think more women know this now--we cannot have it all, and we've given up trying. We know we have to pick.

Her generation also shook the foundations of authority, giving me the breathing room to figure some things out for myself. While she believed fully in experts, she somehow instilled a mile-wide streak of doubt in her children.

That doubt led our family to homebirth and nursing and cloth diapers, things many in her generation had really moved away from. It led to home schooling and homesteading. My life is probably pretty far removed from what my mother might have imagined for me; she might have chastised me for wasting opportunities her generation fought for. Still, I know she believed what she told us in that car that long ago Sunday. I know someone had deeply hurt her for what she had decided was best for our whole family, and I know she would understand that my decision might not look the same but is based on that exact foundation.

Unfortunately, character has traditionally been viewed in a very limited way over the decades. Political, religious, and educational institutions frequently stake claim on 2-5 characteristics deemed to be most important and then attempt to impose these on congregants, students, and others. Common traits typically focused upon include responsibility, honesty, respect, integrity, and kindness.

Recently, character has been put to the rigors of science and scientists have delivered. Following rigorous investigation and scientific analyses over a three-year period, a classification and measurement tool emerged. The resulting 24 character strengths continue to be studied by researchers around the world and practitioners from multiple disciplines.

Now, back to the politics?.

Across the United States, citizens and politicians are engaging in vigorous debates about who should be our next president. Yet, despite all of the time spent discussing the candidates? positions on the issues, according to an Associated Press-Ipsos poll, it is character that matters most when choosing a president.

And character does not take center-stage. What takes center-stage are attack ads, comments about the failings of the other candidate, self-promotion, and glorious proclamations.

Who are these four men really? What strengths are really at their core?

You can take action to contribute to this meaningful discussion. Take the VIA Presidential Caucus poll. In less than 5 minutes, you?ll have the chance to identify those character strengths that you believe are most essential in a great President, as well as identify those strengths you believe are strongest in the current Presidential and Vice-Presidential candidates. This unique poll comes from a non-profit, non-partisan organization, the VIA Institute on Character.

In a future entry, I will share with you the results of the poll.

The Grammy Award-winning singer of such songs as "Mandy," ''I Write the Songs" and "Looks Like We Made It," will start a 17-show stand on Jan. 18 at the St. James Theatre.

Manilow, who grew up in New York, has graced a Broadway stage before, in the winter of 1976 and the spring of 1989. His new show, called "Manilow on Broadway," has tickets ranging in price from $50 to $350.

The 69-year-old crooner, whose most famous song may be "Copacabana (At the Copa)," had 25 consecutive Top 40 hits on the Billboard Hot 100 between 1975 and 1983.

Immune cells of the blood might replace dysfunctional brain cells

The immune system is comprised of multiple cell types each capable of specialized functions to protect the body from invading pathogens and promote tissue repair after injury. One cell type, known as monocytes, circulates throughout the organism in the blood and enters tissues to actively phagocytose (eat!) foreign cells and assist in tissue healing. While monocytes can freely enter most bodily tissues, the healthy, normal brain is different as it is sequestered from circulating blood by a tight network of cells known as the blood brain barrier. Thus, the brain must maintain a highly specialized, resident immune cell, known as microglia, to remove harmful invaders and respond to tissue damage.

In certain situations, such as during disease, monocytes can enter the brain and also contribute to tissue repair or disease progression. However, the potential for monocytes to actively replace old or injured microglia is under considerable debate. To address this, Nicholas Varvel, Stefan Grathwohl and colleagues from the German Center for Neurodegenerative Diseases (DZNE) T?bingen and the Hertie Institute for Clinical Brain Research in T?bingen used a transgenic mouse model in which almost all brain microglia cells (>95%) can be removed within two weeks. This was done by introducing a so-called suicide gene into microglia cells and administering a pharmaceutical agent that leads to acute death of the cells. Surprisingly, after the ablation of the microglia, the brain was rapidly repopulated by blood-circulating monocytes. The monocytes appeared similar, but not identical to resident microglia. The newly populated monocytes, evenly dispersed throughout the brain, responded to acute neuronal injury and other stimuli ? all activities normally assumed by microglia. Most interestingly, the monocytes were still present in the brain six months - nearly a quarter of the life of a laboratory mouse - after initial colonization.

These studies now published in PNAS provide evidence that blood-circulating monocytes can replace brain resident microglia and take over the essential immune surveillance of the brain. Furthermore, the findings highlight a strong homeostatic mechanism to maintain a resident immune cell within the brain. The observation that the monocytes took up long-term residence in the brain raises the possibility that these cells can be utilized to deliver therapeutic agents into the diseased brain or replace microglia when they become dysfunctional. Can monocytes be exploited to combat the consequences of Alzheimer's disease and other neurodegenerative diseases? The scientists and their colleagues in the research groups headed by Mathias Jucker are now following exactly this research avenue.
